In order to develop the use of chicken protein resources, the paper discusses the chicken plasma protein separation and spray drying process. First, the influence of different centrifugal speed and centrifugal time on chicken plasma protein separation effect; the use of a spray dryer SD-BASIC (UK Labplant company) to study the hot air temperature of the spray drying process, the feed rate of chicken plasma protein powder extraction rate , moisture content, crude protein content, nitrogen solubility index affect the color of the indicators. The results show that: the centrifugal speed and centrifugal time had a significant effect (p <0.05) for plasma protein separation; optimum separation conditions are: centrifugal rotation 3 000r / min, centrifugation time 15 min. Interaction spray drying hot air temperature, feed rate, and between the quality of chicken plasma significantly affect (p <0.05); spray pressure of 0.3 MPa, feed temperature is 25 ℃, hot air temperature of 150 ℃, feed rate 0.167 mL / s at best, then another on plasma protein extraction rate, moisture content, crude protein content, nitrogen solubility index was 64.289%, 4.514%, 72.644%, 97.295%.
